Ingredients: 12 tomatoes, cut into quarters; 2 red onions, thick slices; 2 serrano peppers, roughly chopped; 1 tsp salt; ½ tsp black pepper; 2 tbsp olive oil; 1 large onion, finely chopped; 2 tbsp olive oil; 5 cloves garlic, crushed; ¾ tsp salt; 1 tsp Aleppo pepper; ½ tsp black pepper; 8 cups boiling vegetables (or chicken) stock; 1 cup fresh oregano leaves; Vegetable oil, for frying; Pinch of salt; 450 g halloumi; Toasted Ciabatta bread; 2 tomatoes, sliced; ¼ tsp salt; ¼ tsp black pepper; ¼ tsp Aleppo pepper; ¼ cup fresh oregano leaves; ¼ cup 35% cream; 2 tbsp olive oil; Aleppo pepper, for garnish

Instructions

Preheat your oven to 375F.
Lay a baking tray with parchment paper. Add the tomatoes, onion, serrano, season with salt and black pepper, and drizzle with olive oil. Mix with your hands to coat and distribute evenly. Bake in the oven for 30 to 35 minutes until the vegetables have softened the edge of the vegetable skins are partially charred.
In a large pot over medium-high heat, add olive oil until it shimmers. Add the diced onions and cook for 5 to 6 mins until translucent, add the garlic and cook for 2 more minutes until fragrant.
Remove the vegetables from the oven and add the vegetables and juices to the pot and mix well. Season with salt, black pepper and Aleppo peppers and cook for 5 minutes.
Add the boiling vegetable (or chicken) stock and stir well. Cooking for 5 minutes, then lower the heat to medium-low and cook covered, stirring occasionally, for 25 to 30 minutes. Using a hand blender, blend the soup into a fine liquid and keep warm.
To cook the halloumi, in a heated skillet on medium heat, add the halloumi and cook on one side for 2 or 3 mins, until golden, then flip and cook 2 more minutes on the other side.
Slice the toasted bread, add the halloumi, top with slices of tomatoes and sprinkle with salt, black pepper and Aleppo peppers. Top with the fresh oregano leaves. Slice into portions.
To serve, ladle, one to two cups in a bowl, drizzle with a tablespoon of cream and olive oil, top with fried oregano and sprinkle with Aleppo peppers.
