Ingredients: 20 jumbo shrimp (850 g); 1 red onion, medium dice; 4 cloves garlic, roughly chopped; 1 Serrano pepper, roughly chopped; ½ tsp salt; ¾ tsp Aleppo pepper; ½ tsp chili flakes; 1 lemon; 3 tbsp olive oil; ½ tsp salt; ½ tsp hot paprika; ½ tsp chili flakes; ½ lemon; 2 tbsp olive oil; 1 cup fresh cilantro leaves; 1 cup fresh cilantro, for garnish; Lemon wedges, for garnish

Instructions

Add the onion, garlic and serrano peppers to a mortar with salt, Aleppo pepper and chili flakes, using a pestle crush into a paste. Add the lemon juice and olive oil and mix well.
In a bowl, add the shrimps and the marinade. Season with salt, hot paprika, and chili flakes. Squeeze more lemon juice, add a drizzle of olive oil and some torn cilantro leaves. Cover and marinade in the fridge for an hour.
To cook, in a pan over medium-high heat, add olive oil until it shimmers, add the shrimp, the pan will sizzle, and cook for 3 minutes. Flip and for 3 more minutes on the other side. Once turned opaque and no long translucent, remove from heat.
Place in a serving dish, tear some cilantro leaves on top and serve with lemon wedges. What an amazing appetizer. Enjoy while hot.
