Ingredients: 2 whole European seabass (400g each); ½ tsp salt; ¼ tsp black pepper; 4 bay leaves; 2 large garlic cloves, smashed; Lemon slices; 2 handfuls cilantro; 2 tbsp olive oil; ¾ tsp salt; ½ tsp black pepper; 2 tsp ground coriander; 1 red onion, medium dice; 3 large cloves garlic, roughly chopped; ½ tsp salt; ¼ tsp black pepper; 1 lemon; 3 tbsp olive oil; Handful of Cilantro; 1 cup fresh cilantro leaves; 2 tomatoes, sliced in half, grilled; 2 Serrano peppers, grilled; 2 lemons, sliced in half, grilled

Instructions

Prepare your charcoal grill. Light the charcoal and when the coals are mostly covered in ash, they're ready to use. Use tongs to spread out the coals before you cook.
Place the trimmed and trimmed seabass in the grill basket, pat dry with paper towels until fully dry. Make 3 slits on either side of the fish to allow the spices to seep in. Season the inside with salt and pepper, then add 2 bay leaves, a smashed garlic cloves, 2 slices of lemon and a small bunch of cilantro.
Brush the seabass on both sides with olive oil, and season with salt, black pepper, and ground coriander. Close the grilling basket.
Place the tomatoes and lemons on the grill 10 minutes before you start grilling the fish.
Place the grilling basket on the charcoal and cook for 4 minutes on each side, keeping an eye on it as it cooks pretty quickly. Once the juices run clear you are good to go, do not overcook the fish.
To make the dressing, in a mortar, add the chopped onion and garlic with some salt and pepper, and using a pestle crush into a paste, add juice of the lemon and olive oil and mix well until combined.
Your fish is cooked by now, carefully remove from the basket and onto a serving platter, decorate with the grilled vegetables, drizzle the dressing on top and garnish with fresh cilantro. Squeeze the grilled lemons on the seabass and enjoy while hot.
