Swiss Chard Dip

I find Swiss chard to be an underappreciated vegetable. Of all the edible greens Mother Nature has to offer, Swiss chard is one of the most beautiful in colour and foliage—and it’s highly nutritious, to boot. Once harvested, the leaves are quite perishable, so I try to get it fresh from the farmers market or directly from a farm if I’m on a road trip. This is one of my favourite dips to eat with pita bread or as a side dish.

Serves 3 to 4

Ingredients and directions

1 large bunch Swiss chard

1 portion tahini sauce

⅓ tsp each cayenne pepper and hot paprika

2 tbsp olive oil

1. Rinse the Swiss chard well and chop into 1-inch pieces. In a large pot, bring water to a boil; cook the Swiss chard for about 8 minutes. Drain well and let cool. Transfer the Swiss chard to a plate; using your hands, break apart any clumps.

2. In a serving bowl, stir together the tahini sauce and the Swiss chard, mixing well to coat. Sprinkle with the cayenne pepper and paprika and drizzle with the oil. Serve with pita bread.
