Vegetable and Meatballs Tajine (Tagine)
Tagine is a North African Maghreb dish that’s named after the earthenware vessel it’s cooked in, but growing up, this version was what we called tagine: a medley of vegetables sauteed with meatballs and cooked in a spicy tomato-tahini sauce until tender, succulent and full of flavour. We always ate this with crunchy garlic pickles and use pita to scoop up everything.
