Sido’s Sunny-Side Ups

Be warned. There is so much flavour in those sunny-side ups, you may not want to go back to the ones you have known all your life.

Ingredients

  • 1 tbsp butter, divided

  • 1 large clove garlic, finely chopped

  • 2 eggs

  • ½ tsp ground sumac

  • ¼ tsp each salt and pepper

  • 2 sprigs parsley

Who doesn’t like eggs sunny-side up? (That was my preferred way to have them when I was a kid.) My dad’s father, Sido, had a reputation for being a picky eater (much like his eldest daughter, Katy); he enjoyed what he enjoyed, and that was it. This recipe has the honour of being Sido’s favourite breakfast. I was skeptical when my dad listed the ingredients, but now I’m a believer; one taste and I bet you will be, too. Apparently, fussiness when it comes to eggs runs in my family: My father didn’t like the yolks when he was young, so every time he was served a boiled egg, he would pick the yolk out, then when no one was looking, flick it onto the top of the dining cabinet. His parents didn’t find out until it was time to clean the cabinet—many weeks later!
